Chef Summer Favorites: Grilled Sardines

Whether you’re behind the grill or escaping from the heat indoors, summertime is the perfect season to try new recipes. Greg Thompson, executive chef at Del Frisco’s Double Eagle Steak House in Orlando, shares one of his favorite summertime dishes: Charcoal Grilled Summer Sardines. 

“One of my favorites in the summer is to grill seafood over a charcoal grill,” said Chef Greg. “I like to keep it simple by choosing great ingredients like fresh sardines. You can find the freshest sardines at high-end supermarkets or local fish markets. Look for sardines that have a clean ‘ocean’ smell with clear eyes.”

While you’re at the supermarket, one mustn’t forget the wine.

“I am a huge fan of Sauvignon Blanc from New Zealand,” said Chef Greg. “It is a combination of tropical fruit and crisp acidity that pairs nicely with the sardines.”

Charcoal Grilled Summer Sardines

Fresh Sardines
Kosher Salt
Fresh Cracked Black Pepper

1. Season sardines with kosher salt and black pepper.
2. Place sardines on the grill (Chef Greg recommends a charcoal kettle style grill).
3. Allow sardines to grill for 3-5 minutes on each side.
4. Remove from heat and squeeze lemon over sardines.
