Terrunyo, Sauvignon Blanc, Casablanca Valley, Chile

Beautiful expression of mouthwatering acidity, bright citrus flavors and tropical fruits. Terrunyo’s limited-production approach minimizes yields and maximizes grape quality to  accentuate each wine’s sense of place.

SECOND COURSE

CHILEAN SEA BASS
Chorizo & Roasted Corn Velouté, Baby Clams, Crispy Smashed Gold Potatoes Bravas

Amelia, ‘Quebrada Seca’, Chardonnay, Valle Del Limarí, Chile

Multi-layered with aromas of white flowers and pears, with a predominance of flinty mineral notes. Refreshing, with an excellent combination of structure and minerality. From the Single vineyard, Quebrada Seca, “The Dry Creek” wheretemperatures are cold, and the mornings are cloudy, this allows the fruit to ripen slowly and produce fresh wines.

SOUS VIDE PORK TENDERLOIN
Spice Rubbed & Cola Braised, Smokey Garlic Mushrooms, Charred Scallion Chimichurri

Amelia,‘Quebrada Seca’, Pinot Noir, Valle Del Limarí, Chile 

Amelia is Complex and multi-layered, with a predominance of red cherry notes and a hint of black tea leaf resulting in a refreshing wine with a long fresh finish. From the single vineyard Quebrada Seca, Amelia Pinot Noir is grown among cactus and in limestone soils in Chile's Limari Valley

FOURTH COURSE

DRY AGED PRIME RIBEYE
